We love salsa





I got the best salsa recipe from Tammy Cutler this summer. You take about 8 pounds of tomatoes and cube. A couple of avocado's and cube. One onion and chop. Add any salsa packet seasoning. This is a great fresh salsa.

Because I had so many tomatoes I canned these. I didn't think avocado's would can well. We changed the recipe for canning. We chopped up tomatoes, onions, peppers and seasoning packets. I added some red crashed hot peppers to some. Lucky for me I had help stop by. What was I thinking I should have called all the girls and it would have gone by faster. I know Aleisa would have been there and I wouldn't have been in the kitchen so long. Next year...

Spinach Dip

I love this appetizer I always get compliments whenever I make it.

8 oz cream cheese

2 Cups mayonnaise

2 Cups Sour cream

2 Cans water chestnuts, chopped (I do not use this much it is to much for me. I usually only do 1 can).

1 Pkg Knorr Leek Soup ( this can be found in the soup section. It is also hard to find usually Smiths has it during the holiday season.)

1 Pkg Vegetable Soup Mix

1 Pkg Frozen Chopped Spinach (squeeze dry w/paper towel)

Mix all ingredients together and chill. I usually make at least 12 hrs before. It takes awhile for the spinach and cream cheese to blend well.

I will put this in a bread bowl and serve with different breads. It is great I love it!!
